Production Controller

Role Purpose,

To oversee the milk receiving, processing and manufacturing process.To ensure that production lines run without any problems and minimum downtime. Adhering to business requirements and changes which will positively influence Yoghurt manufacturing.

, Requirements,

• Minimum: Matric Qualification
• Dairy Manufacturing qualification
• A Tertiary Qualification: National Diploma / Equivalent in
• Biotechnology, Food Science would be advantageous.
• Minimum 3 yrs. in a manufacturing preferably processing
• Experience in FMCG Environment
• Computer Literacy
• Good communication skills

, Duties and Responsibilities,

• Ensure efficient running of milk receiving, milk processing, and yoghurt processing departments.
• Directly control the process of making good quality yoghurt base from mixing; pasteurization and re-pasteurization, inoculation, fermenting, cooling and supply to machines including all relevant documentation.
• Monitor services/utilities, water, steam, electricity, ice water, air control.
• Fat & Protein losses to be in line with budget in the variance consumption of materials report - protein solver to be used accurately for all batches.
• Ability to maintain accurate primary documentation to support
• MMS/BPCS & GMP Mass Balance
• Work in close collaboration with Analytical Lab to produce accurate Fat & Protein results for input into GMP -Mass balance - knowledge of FT1 & Food Scan instruments required.
• Ability to control processing equipment maintenance schedules.
• Bulk base losses to be within the scrap factor.
• Adhere to FSSC 22000 Food Safety system.
• Control all relevant CIP’s, validations and verification, including documentation & records.
• Have sound knowledge of SCADA and PLC’s
• Participate in internal and external audits: FSSC 22000, HO Raw Milk
• Audit, Agri, and NOSA and GMP-Mass Balance Audits.
• Take lead in trouble shooting and engage to generate Non- Conformances and Corrective
• Adhering to business requirements and changes which will positively influence Yoghurt manufacturing.
