The Food & Beverage Manager will be responsible for overseeing all aspects of the F&B department, ensuring impeccable service, optimal profitability, and a consistently high standard across the guest experience. This leadership role requires someone who is confident in managing both front- and back-of-house operations, has excellent team management abilities, and can contribute strategically to the broader business objectives.
Key Responsibilities:
Operations:
Oversee daily operations across all F&B outlets, ensuring consistency in service and presentation
Work closely with the Head Chef on menu development, cost control, and guest experience design
Maintain hygiene, health, and safety standards across all F&B areas
Design and execute creative guest experiences aligned with current trends and the brand’s identity
Monitor guest satisfaction through regular feedback and audits
Ensure the ambiance and service style across outlets reflect luxury expectations at all times
Financial Oversight:
Manage F&B cost centres and ensure food and beverage profitability within target margins
Monitor and control beverage stock and purchasing
Collaborate with the GM and Head Chef on cost reviews, budgets, and forecasts
Maintain strict control of inventory and Capex spending
Deliver monthly reporting and performance analysis
Human Resources & Leadership:
Lead and motivate the F&B team to achieve operational excellence and service delivery
Drive recruitment, training, and upskilling of all F&B staff
Implement effective performance management systems, including KPIs and development plans
Maintain a structured yet fair approach to staff management, fostering a high-performance culture
Conduct regular team briefings, coaching sessions, and appraisals
Marketing & Brand Development:
Ensure all brand standards are consistently upheld
Contribute to the annual guest experience plan and associated marketing budget
Research international F&B trends and incorporate innovations into the offering
Work closely with the GM on brand-aligned strategies and guest engagement
Minimum 4 years’ F&B management experience in a 5-star hotel or luxury boutique environment
Hospitality Management Diploma or Degree (preferred)
Excellent communication and guest-interaction skills
Proven track record in F&B financial and operational leadership
Strong computer literacy (MS Office, Opera, Micros)
Knowledge of stock, cost control systems, and budgeting
Sound HR knowledge and experience with performance management
Excellent attention to detail and service standards
Location: KwaZulu-Natal North Coast
Job Level: Department Head
Salary: R30,000 per month (negotiable based on experience)
Accommodation: Not provided – local candidates or those with own accommodation preferred
Reporting To: Hotel Manager and Managing Director
Between 3 - 5 Years
