THE MISSION

You are the silent guardian of Mama’s standards — ensuring every kitchen, outlet, and back-of-house space operates at the highest level of hygiene, safety, and compliance.

As our Hygiene Manager, you protect the integrity of the guest experience by making sure every detail behind the scenes is clean, controlled, and audit-ready at all times.

You bring structure, discipline, and consistency to a fast-paced, high-energy environment — where standards are non-negotiable

Here’s What You’ll Be Responsible For

Hygiene & Sanitation Leader

  • Define, implement, and maintain Mama’s hygiene and sanitation standards across all F&B and BOH areas
  • Ensure daily cleanliness checks are completed and standards are consistently upheld
  • Drive a culture of cleanliness, accountability, and pride across all teams

Compliance & Food Safety Champion

  • Ensure full compliance with local food safety regulations and HACCP standards
  • Maintain up-to-date documentation, logs, and audit readiness at all times
  • Lead internal and external hygiene audits with confidence and accuracy

Risk & Control Manager

  • Identify hygiene risks and implement corrective actions proactively
  • Monitor pest control, waste management, and sanitation processes
  • Ensure all incidents are recorded, resolved, and prevented from recurring

Training & Awareness Leader

  • Train kitchen, stewarding, and service teams on hygiene best practices
  • Deliver regular refresher sessions to maintain high awareness and compliance
  • Embed a strong hygiene-first culture across all departments

Cross-Team Collaborator

  • Work closely with Culinary, Stewarding, and Operations teams to ensure alignment
  • Support pre-opening setups, inspections, and operational readiness
  • Act as the key point of contact for all hygiene-related matters

Standards Guardian

  • Conduct regular inspections across kitchens, storage areas, and back-of-house spaces
  • Ensure proper chemical usage, storage, and safety procedures are followed
  • Maintain impeccable documentation and reporting standards

Culture & Discipline Driver

  • Champion a “clean as you go” mindset across all teams
  • Promote pride in operational spaces and behind-the-scenes excellence
  • Help create an environment where high standards are lived, not just checked

Qualifications

  • You have strong experience in hygiene management within hospitality or large-scale F&B operations
  • You are highly structured, detail-driven, and uncompromising on standards
  • You understand HACCP, food safety regulations, and audit processes in depth
  • You are confident working across multiple outlets and fast-paced environments
  • You are a strong communicator who can influence teams at all levels
  • You are calm, consistent, and highly organised under pressure
  • You take pride in operational excellence behind the scenes, where guest experience begins
  • You are proactive, solution-focused, and always one step ahead
