As Assistant Restaurant Manager (Breakfast), you bring calm control, energy, and precision to the most important meal of the day—ensuring every morning starts the Mama way: smooth, vibrant, and full of personality.
You are present on the floor from the very first guest, supporting the team in real time and making sure breakfast service feels effortless, welcoming, and consistent
Here’s What You’ll Be Responsible For
Breakfast Guest Experience Champion
- Support delivery of a warm, energetic, and seamless breakfast experience
- Engage with guests in the morning, creating a welcoming and memorable start to their day
- Handle guest feedback quickly, positively, and with a calm, solutions-focused approach
Morning Operations Leader
- Support daily breakfast operations including setup, service, and handover to lunch team
- Ensure smooth coordination between kitchen, bakery, and service teams
- Maintain strong service flow, cleanliness, and readiness during peak morning periods
Commercial Support Driver
- Support achievement of breakfast revenue, covers, and upselling opportunities
- Help monitor wastage, stock usage, and efficiency during morning service
- Encourage strong service rhythm that supports speed and profitability
Team Support & Floor Leadership
- Lead from the floor during breakfast service, supporting and guiding the team in real time
- Assist with briefing, organisation, and motivation of early shift teams
- Help build confidence, consistency, and positive energy in the morning team
Collaboration Partner
- Work closely with Culinary, Bakery, and FOH teams to ensure smooth breakfast execution
- Support coordination of high-volume service periods and weekend peaks
- Ensure alignment between product delivery and Mama’s guest experience standards
Standards Keeper
- Maintain Mama’s service standards across all breakfast touchpoints
- Ensure cleanliness, presentation, and setup are consistently on point
- Support adherence to brand standards, hygiene, and service timing
Energy & Morning Atmosphere Driver
- Set the tone for the day through calm, positive, and structured leadership
- Create a breakfast environment that feels easy, welcoming, and well-orchestrated
- Ensure the team starts strong and stays focused throughout service

Qualifications
MADE FOR YOU… ONLY IF
- You have solid Food & Beverage experience in hospitality
- You are comfortable working early shifts and high-volume breakfast service
- You come from lifestyle, luxury, or hotel dining environments
- You are calm under pressure and highly organised in fast-paced operations
- You are a natural floor leader who supports and guides teams
- You are commercially aware with a good understanding of service efficiency
- You are passionate about guest experience and starting the day right
- You communicate clearly and lead with positivity
- You enjoy being actively present on the floor, not behind a desk
