The Role

A 5 Star Boutique Hotel in Knysna requires a qualified Executive Sous Chef to provide leadership and active management for all day–to–day operations of the kitchen to ensure that best practices are consistently carried out to achieve the highest levels of service possible.

GENERAL RESPONSIBILITIES

  • Provide meals of a consistent high quality
  • Management of stock – orders / stock rotation / regular stock takes ensuring gross profit targets are met
  • Recipe development – bringing in new ideas in keeping with the hotel’s food style
  • Costing, implementing and training on existing and new recipes
  • Overseeing equipment, ensuring servicing of bigger items
  • Supplier relations –Must be able to negotiate best prices and explore new options, but at the same time taking into consideration existing supplier relationships.
  • Guest liaison – especially when it comes to specific dietary requirements & guest complaints
  • Liaise with FOH and Duty Managers re menu of the day.

HUMAN RESOURCES

  • Effectively manage the Kitchen team
  • Performance management –staff training initiatives to develop and empower all staff with new skills Kitchen rosters, and daily checking of the Kitchen team roster, and implement any necessary changes
  • Conduct counselling sessions and disciplinary action as required
  • Induction and basic training for new Kitchen employees

Skills and Experience

SKILLS & ATTRIBUTES

  • Must have a recognised food related qualification and 3 years’ experience in a similar position.
  • Computer literacy - and develop an understanding of the hotel’s property and stock management systems (currently Plus point & Plus Central)
  • Experience ensuring the smooth running of groups & functions.
  • Any other duties that would be reasonable to ensure the successful and smooth running of the hotel as requested by the General Manager and / or Owners
