Bar Manager

A well established multi-venue hospitality group in East London is looking for an experienced Bar Manager to take full ownership of its bar operations. The venue spans a cafe/restaurant, a lounge/club and a separate event space, so this is a big, hands-on role for someone who thrives running multiple bars at once.

The successful candidate will manage every aspect of the bar function across all three venues, from stock and ordering to staff, service standards and drink creation. This is not an entry level position. We're looking for someone with genuine bar management experience who can run a team, control costs and keep standards consistent across different environments, from casual dining to late night lounge service.

Key Responsibilities:

• Oversee full bar operations across the cafe/restaurant, lounge/club and event space
• Manage stock control, ordering and supplier relationships for all bar areas
• Develop and maintain drink and cocktail menus, including seasonal updates
• Recruit, train, schedule and manage bar staff across venues and shifts
• Control bar costs, wastage and stock variances, and manage margins
• Maintain consistent service standards and presentation across all venues
• Ensure compliance with health and safety regulations
• Coordinate bar service for events and functions in the venue space
• Handle cash-ups, reconciliations and reporting to management

What We're Looking For:

• Minimum 4-5 years bar management experience, ideally across multiple venues or a high-volume operation
• Strong cocktail and beverage knowledge, with the ability to develop menus
• Proven leadership and staff management skills
• Solid understanding of stock control, costing and margin management
• Experience with POS and stock management systems
• Ability to work evenings, weekends and event-based hours
• A hands-on, organised operator who can run a busy bar under pressure

Salary: Negotiable based on experience. R 25k+-
